Bacon and Chive Buttermilk Scones (aka Biscuits)

Ingredients
- 2 cups self-raising flour
- 80g diced cold butter
- 100g diced cooked bacon
- A handful of chopped chives
- A good pinch of salt
- 1 tbsp caster sugar
- ¾ to 1 cup buttermilk
Method
Set your oven to 200℃.
Place the flour, salt, sugar, and butter into a bowl and, using your fingertips, begin mixing the butter into the flour. This helps to avoid warming the butter too much. When it begins to resemble breadcrumbs, add the chives and bacon and mix slightly.
Finally, add the buttermilk and mix until it all comes together. At this stage, be careful not to overwork the flour.
Once you have formed a dough, roll the mix out on a floured work surface and use a cutter to cut out circles of dough. Place onto a lined baking tray.
